SHRIMP PASTA WITH SWEET CHILI SAUCE

Ingredients

  • 20 shrimp (5 per person)

  • 10 gr garlic

  • 10 gr shallots

  • 10 gr ginger

  • 90 ml sweet chili sauce

  • 240 ml chicken bouillon

  • 15 ml sesame oil

  • Salt

  • Pepper

  • 3 green onions

  • Toasted peanuts

Directions

  •    Peel and devein shrimp

  •    Finely chop the garlic

  •    Finely chop the shallots

  •    Finely chop the ginger

  •    Toast the peanuts in a dry pan

  •    Thinly slice the green onions

  •    Heat the oil in a pan or wok

  •    On low heat sweat the ginger until fragrant

  •     Add the garlic sweat until fragrant

  •      Add the shallots sweat until fragrant

  •      Turn up the heat to high add the shrimp and let them start to colour

  •      Add the sweet chili sauce and the liquid , let cook until the liquid reduces to form a sauce. If the shrimp are cooked you may remove them while the sauce reduces

  •      Season with salt and pepper

  •      Add pasta and toss

  •      Garnish with green onions and peanuts

  • Cook the pasta ahead of time
