Ingredients
300 gr cubed tofu
75 gr red peppers julienned
75 gr carrots thinly sliced
75 gr broccoli fleurettes
10 gr garlic
10 gr shallots
10 gr ginger
90 ml sweet chili sauce
240 ml chicken bouillon
15 ml sesame oil
Salt & Pepper
3 green onions
Toasted peanuts
Directions
Peel and devein shrimp
Finely chop the garlic
Finely chop the shallots
Finely chop the ginger
Toast the peanuts in a dry pan
Thinly slice the green onions
Heat the oil in a pan or wok
On low heat sweat the ginger until fragrant
Add the garlic sweat until fragrant
Add the shallots sweat until fragrant
Turn up the heat to high add the tofu and let it start to colour
Add the carrots and the peppers
Add the sweet chili sauce and the liquid, let cook until the liquid reduces to form a sauce.
Season with salt and pepper
Add pasta, brocolli and toss
Garnish with green onions and peanuts
Note:
- Cook the pasta ahead of time
- Cook the broccoli in boiling salted water ahead of time
- You can add or replace any of the vegetables
