Tofu and Vegetable Pasta with Sweet Chili Sauce

Ingredients

  • 300 gr cubed tofu

  • 75 gr red peppers julienned

  • 75 gr carrots thinly sliced

  • 75 gr broccoli fleurettes

  • 10 gr garlic

  • 10 gr shallots

  • 10 gr ginger

  • 90 ml sweet chili sauce

  • 240 ml chicken bouillon

  • 15 ml sesame oil

  • Salt & Pepper

  • 3 green onions

  • Toasted peanuts

Directions

  • Peel and devein shrimp

  • Finely chop the garlic

  • Finely chop the shallots

  • Finely chop the ginger

  • Toast the peanuts in a dry pan

  • Thinly slice the green onions

  • Heat the oil in a pan or wok

  • On low heat sweat the ginger until fragrant

  • Add the garlic sweat until fragrant

  • Add the shallots sweat until fragrant

  • Turn up the heat to high add the tofu and let it start to colour

  • Add the carrots and the peppers

  • Add the sweet chili sauce and the liquid, let cook until the liquid reduces to form a sauce.

  • Season with salt and pepper

  • Add pasta, brocolli and toss

  • Garnish with green onions and peanuts

Note:

  • Cook the pasta ahead of time
  • Cook the broccoli in boiling salted water ahead of time
  • You can add or replace any of the vegetables
